Went to the Mellow Mushroom (very cool pizza place) and then for ice cream with a group of our friends. I used my gift certificate I got for
Secretary's Day Administrative Professionals Day. Yeah!
Saturday was Armed Forces Day. Since J plays trumpet for an Army Band, he had to work. His band had a cookout and then played a Concert to celebrate the day. Of course I had asked J all week to find out from his Commander if I could bring anything. So what does J do? He calls me at home on Saturday at 10:45am and says, "Oh, I talked to the Chief and he says you can bring baked beans if you want..." The picnic was to start at noon. I hadnt showered and I had no baked beans on hand. BUT, because Ive got mad skills. I managed to shower, go to the store, come back, cook up the baked beans and throw together a wonderful cake/fruit/pudding/cool whip dessert and still make it to the base with 4 minutes to spare. I know, Im THAT good.
The afternoon was beautiful and they played a wonderful concert. J and I were both pretty tired after that and just chilled at home Saturday night. I finally watched Drumline...
Sung in church. Then J and I went on a serious grocery store shopping trip. We have a grocery store right next to our house ( ok, not RIGHT NEXT to, but about 4/10's of a mile away) but it isnt very good to really stock up. So we drove out to the nice store and bought lots of food to make many meals with. Then we drove over to the base because they were playing a free showing of that new Adam Sandler football moving ( the name is escaping me)
Sunday night I roasted a 7lb chicken in a lime/mesquite marinade, stuffed it with limes and made mac N Cheese casserole and rolls and peas and invited the guys over. Its kinda becoming a tradition to cook on Sundays and invite J's work buddies over. Well, they are my friends too. Jason made garlic and herb mashed potatoes. The chicken and potatoes were well received and while they like the mac N Cheese Casserole, they only said that was ok. Oh well. Cant win them all. I made a light pumkin mousse for dessert using pumkin, all spice and cool whip blended very well together with a dash of cinnamon on top and a pecan sandie placed in the middle.
I dont know what I will make next week. I am thinking meat loaf or a pot roast. I know it may seem strange because I am a vegetarian, but I LOVE making Meat Loaf. Its something I feel like I have complete control over and I love adding new things to it.
Fred is doing well. No accidents. He is very lively and loves to chase Alfred and Bella around and "fight" for their toys. He also LOVES to jump in my lap and get belly rubs until he falls asleep. More pics to come tonight... But in the mean time, here is one of my baby girl Holly ( well, she's no baby, she's actually 8)
